Bow Ties and Spinach Salad

A playful twist on the classic salad — tender bow ties and fresh leaves of spinach come together in a vibrant and satisfying dish.

INGREDIENTS:

6 ozSan Giorgio® Farfalle
2 cupsfresh spinach leaves, chopped
1 cupcherry tomatoes, halved
1/4 cupgreen onion, sliced
1/4 cuplight olive oil
2 Tbspslemon juice
1 tspDijon mustard
2garlic cloves, chopped
1/2 tspsalt
1/2 tspsugar
toasted pine nuts (optional)

DIRECTIONS:

  1. Prepare pasta according to package directions.
  2. In large bowl, combine cooked pasta, spinach, tomatoes and green onions.
  3. In small bowl, combine all remaining ingredients except pine nuts; mix well.
  4. Pour dressing over spinach mixture; toss well. Top with pine nuts if desired. Serve immediately.
